Description

Shredded chicken, cream cheese, and melty cheese wrapped in tortillas and baked to crispy perfection — these taquitos are creamy on the inside, crunchy on the outside, and totally addictive!


Ingredients

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 4 oz cream cheese, softened
  • 1 cup shredded Mexican blend or cheddar cheese
  • ¼ cup salsa or diced green chiles
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp chili powder (optional for a little heat)
  • ½ tsp salt
  • 1012 small flour or corn tortillas
  • Cooking spray or olive oil spray
  • For serving (optional):
  • Sour cream
  • Guacamole
  • Salsa
  • Chopped cilantro

Instructions

1️⃣ Preheat oven:
Preheat to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Make the filling:
In a large bowl, mix shredded chicken, cream cheese, shredded cheese, salsa (or green chiles), garlic powder, onion powder, chili powder, and salt until well combined.

3️⃣ Assemble taquitos:
Warm tortillas slightly to make them easier to roll. Place about 2-3 tablespoons of filling onto one side of each tortilla. Roll tightly and place seam-side down on the baking sheet.

4️⃣ Bake:
Lightly spray taquitos with cooking spray. Bake for 15-20 minutes, or until golden brown and crispy.

5️⃣ Serve:
Serve hot with your favorite dipping sauces like sour cream, salsa, or guacamole.

Notes

  • You can freeze these before baking for an easy make-ahead meal.
