1 tbsp olive oil
-
Salt and pepper to taste
-
½ tsp paprika
-
½ tsp garlic powder
For the sauce:
-
½ cup mayonnaise
-
¼ cup sweet chili sauce
-
1 tbsp sriracha (adjust to taste)
-
2 cloves garlic, minced
-
1 tbsp lime juice
For the pasta:
-
12 oz spaghetti or linguine
-
Water for boiling
-
Salt for pasta water
Optional Garnish:
-
Chopped green onions
-
Crushed red pepper flakes
Instructions
1️⃣ Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
2️⃣ Prepare the sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, minced garlic, and lime juice until smooth and creamy. Set aside.
3️⃣ Cook the shrimp: Season the shrimp with salt, pepper, paprika, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from heat.
4️⃣ Combine pasta and sauce: In the same skillet, reduce heat to low. Add the cooked pasta and pour in the sauce. Toss well to coat evenly.
5️⃣ Add shrimp: Add the cooked shrimp to the pasta and gently mix.
6️⃣ Garnish and serve: Sprinkle with chopped green onions and a pinch of red pepper flakes if desired. Serve immediately for the boldest flavor.
Notes
-
Adjust the spice: Control the heat by adjusting the amount of sriracha—start with less if you’re spice-sensitive and add more for extra kick.
-
Use fresh shrimp: For the best flavor and texture, use fresh or thawed shrimp, and be sure not to overcook them to keep them juicy and tender.
-
Sauce too thick?: If the sauce feels too thick after combining with pasta, add a splash of reserved pasta water to loosen it up and help coat the noodles evenly.
