  • 2 cups chicken, shredded
  • 1 1/2 cups BBQ sauce
  • 6 tortillas (8-inch)
  • 2 cups cheddar cheese, shredded

Instructions

  • Mix the Chicken and BBQ Sauce: In a large bowl, combine the shredded chicken and BBQ sauce. Toss until the chicken is evenly coated with the sauce.
  • Heat the Tortilla: Preheat a skillet over low-medium heat. Place one tortilla in the skillet and allow it to warm up for 30 seconds to 1 minute until it’s pliable and slightly heated.
  • Add Cheese and Chicken: Sprinkle a generous amount of shredded cheddar cheese on one half of the tortilla. Spread a portion of the BBQ chicken mixture over the cheese, then add another layer of cheese on top of the chicken.
  • Fold and Cook the Quesadilla: Fold the tortilla over the filling and press down lightly. Cook for 2-3 minutes on the first side, then flip and cook for another 2-3 minutes, until both sides are golden brown and crispy and the cheese is melted.
  • Serve: Remove the quesadilla from the skillet, let it cool slightly, and then cut into wedges. Repeat the process with the remaining tortillas, chicken, and cheese.
