1 cup grated zucchini (about 1 medium)
-
1 cup grated carrot (about 2 medium)
-
1 apple, peeled and grated
-
2 cups all-purpose flour
-
1 tsp baking soda
-
1 tsp baking powder
-
½ tsp salt
-
1 ½ tsp ground cinnamon
-
½ tsp ground nutmeg
-
½ cup vegetable oil
-
¾ cup granulated sugar
-
¼ cup brown sugar
-
2 large eggs
-
2 tsp vanilla extract
Optional Add-ins:
-
½ cup chopped walnuts or pecans
-
½ cup raisins
Instructions
1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
2️⃣ Grate the produce: Using a box grater, grate the zucchini, carrots, and apple. Squeeze out excess moisture from the zucchini and apple using a clean kitchen towel or paper towels.
3️⃣ Mix the dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
4️⃣ Combine wet ingredients: In another bowl, whisk together the oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
5️⃣ Add the produce: Stir the grated zucchini, carrot, and apple into the wet mixture until well combined.
6️⃣ Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts or raisins if using.
7️⃣ Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
8️⃣ Cool and serve: Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
