Instructions

1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

2️⃣ Grate the produce: Using a box grater, grate the zucchini, carrots, and apple. Squeeze out excess moisture from the zucchini and apple using a clean kitchen towel or paper towels.

3️⃣ Mix the dry ingredients: In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

4️⃣ Combine wet ingredients: In another bowl, whisk together the oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.

5️⃣ Add the produce: Stir the grated zucchini, carrot, and apple into the wet mixture until well combined.

6️⃣ Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts or raisins if using.
