Ingredients
- For the soup:
- 1 lb ground beef
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups diced potatoes (Yukon Gold or Russet)
- 3 cups chicken or beef broth
- 1 ½ cups milk
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 tsp paprika
- Salt and pepper to taste
Optional additions:
- 1 cup corn kernels (fresh or frozen)
- ½ cup sour cream
- Chopped green onions or bacon bits for garnish
Instructions
1️⃣ Cook the beef: In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if necessary and set beef aside.
2️⃣ Sauté onion and garlic: In the same pot, add olive oil if needed and sauté diced onion for 3–4 minutes until soft. Add garlic and cook for another 1 minute.
3️⃣ Add potatoes and broth: Stir in diced potatoes and pour in the broth. Bring to a boil, then reduce heat to simmer. Cook for 15–20 minutes or until potatoes are tender.
4️⃣ Make it creamy: Stir in the milk and cream. Return the cooked ground beef to the pot. Add paprika, salt, and pepper. Simmer for 5 minutes.
5️⃣ Add the cheese: Gradually stir in shredded cheddar cheese until melted and the soup is smooth. Adjust seasoning to taste.
6️⃣ Serve: Ladle into bowls and garnish with green onions, sour cream, or bacon bits if desired. Serve hot and enjoy!
