These Cheesy Mashed Potato Puffs are golden, crispy on the outside, and soft and cheesy on the inside. They’re a great way to elevate classic mashed potatoes into something exciting and fun to eat. Perfect as a side dish or party appetizer!
Ingredients

2 cups mashed potatoes (preferably leftover or freshly made)

1 cup shredded cheddar cheese (or a mix of your favorite cheeses)

1/4 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko works great for extra crunch)

2 large eggs

1/4 cup sour cream (optional for extra creaminess)

1 tbsp fresh parsley, chopped (optional, for garnish)

1 tsp garlic powder

1 tsp onion powder

Instructions
1️⃣ Preheat the Oven:

Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or a regular muffin tin with olive oil or cooking spray to prevent sticking.
2️⃣ Prepare the Mashed Potatoes:

If you’re using freshly made mashed potatoes, ensure they are cooled slightly before using. If you’re using leftover mashed potatoes, just give them a good stir to loosen them up.
3️⃣ Mix the Ingredients:

In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, sour cream (if using), garlic powder, onion powder, and salt and pepper. Mix everything together until well combined.
4️⃣ Form the Puffs:

Spoon the mashed potato mixture into the prepared muffin tin, filling each cup almost to the top. Press down gently to compact the mixture into each cup.
5️⃣ Bake:

Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops of the potato puffs are golden brown and crispy.
6️⃣ Serve:

Remove from the oven and let cool for a couple of minutes. Gently remove the puffs from the muffin tin using a spoon or fork.
