  3. In the oven now. 20 min at Convection 400 degree –they are a long way from being cooked–although part is I forgot to coat w oil.
    I just couldn’t bring myself to make the Alfredo sauce as much as I would have loved to (watching the fat, carbs. etc.). I had sofrito base in freezer, and I added appr. 12 oz of tomato sauce & 2 oz of red wine and simmered.
    Used Hearts of Palm “spaghetti” from Trader Joes. Next time I’d love to try almond flour & some nutritional yeast (forgot I’d just bought some) in lieu of the parmesan just to cut back on fat more. They smell great; can’t wait to eat them!
