Crack Chicken Noodle Soup is the ultimate comfort food, combining the creamy richness of cheddar cheese and cream cheese with tender shredded chicken, crispy bacon, and the zesty kick of Ranch dressing mix.

Ingredients

Scale

Protein & Dairy:

  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1½ cups shredded mild cheddar cheese
  • ¾ cup cream cheese, softened
  • 1 cup whole milk

Soup Base:

  • 6 cups low-sodium chicken stock
  • 1 (10.5 oz.) can condensed chicken soup

Seasoning & Flavor Enhancers:

  • 1 (1 oz.) packet Ranch dressing mix
  • 12 slices thick-cut bacon, cooked and crumbled

Vegetables:

  • ½ cup chopped celery
  • 2 medium carrots, sliced

Noodles:

  • 8 oz. thin spaghetti or angel hair pasta, uncooked

Instructions

1. Prepare the Bacon

  • Cook thick-cut bacon in a skillet over medium heat until crispy.
  • Drain on paper towels, then crumble. Reserve some for garnish.

2. Combine Ingredients in a Large Pot

  • In a Dutch oven, add chicken, condensed soup, chicken stock, milk, cream cheese, carrots, celery, and Ranch mix.
  • Stir well and bring to a gentle boil over medium-high heat.

3. Simmer the Soup

  • Reduce heat to medium-low and let simmer for 20–25 minutes, stirring occasionally.

4. Add Noodles and Cheese

  • Stir in uncooked noodles and cheddar cheese.
  • Simmer for another 8–10 minutes until noodles are tender and cheese has melted.

5. Garnish and Serve

  • Top with extra crumbled bacon before serving.
  • Enjoy hot with garlic bread or a side salad.

Notes

  • Substitutions:

    • Use Monterey Jack or Colby cheese for a different flavor.
    • Swap chicken breast for rotisserie chicken for convenience.
    • Replace spaghetti noodles with egg noodles or gluten-free pasta as needed.
  • Storage & Reheating:

    • Refrigerate in an airtight container for up to 3 days.
    • If freezing, store without noodles to prevent sogginess. Add fresh noodles when reheating.
  • Make It Healthier:

    • Use low-fat cream cheese and milk for a lighter version.
    • Add extra vegetables like spinach or peas for more nutrients.

With this recipe, you’ll have a rich, creamy, and comforting crack chicken noodle soup that’s perfect for any occasion! 🍲😋
