Ingredients

2 cans (14.75 oz each) salmon, drained and flaked (or 1 lb cooked fresh salmon, flaked)

1 small onion, finely chopped

1 cup breadcrumbs (panko or regular)

2 large eggs

2 tbsp mayonnaise

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1 tsp Old Bay seasoning or Cajun seasoning

Salt and pepper to taste

¼ cup fresh parsley, chopped

Vegetable oil for frying
Instructions
1️⃣ Prepare the mixture:
In a large bowl, combine salmon, onion, breadcrumbs, eggs, mayonnaise, mustard, Worcestershire sauce, Old Bay seasoning, salt, pepper, and parsley. Mix well until ingredients are fully combined.
2️⃣ Form patties:
Shape the mixture into 8 evenly sized patties, about ¾-inch thick.
3️⃣ Heat oil:
In a large skillet, heat about ¼ inch of vegetable oil over medium heat until shimmering.
4️⃣ Fry the patties:
Carefully place patties in the hot oil. Fry for 4-5 minutes on each side or until golden brown and crispy. Work in batches if needed.
5️⃣ Drain and serve:
Remove patties and place on paper towels to drain excess oil.
6️⃣ Serve:
Enjoy with tartar sauce, lemon wedges, or your favorite sides like coleslaw or cornbread.
