Description

Crock Pot Poor Man’s Stew is a budget-friendly, hearty dish that combines simple ingredients like ground beef, russet potatoes, and carrots to create a comforting, nourishing meal. Perfect for busy days or feeding a crowd, this stew comes together easily in a slow cooker, allowing the flavors to blend over several hours without the need for constant supervision.


Ingredients

1 pound Ground Beef browned and drained
3 Medium Russet Potatoes peeled and diced into large pieces
4 Medium Carrots peeled and cut into ½ thick slices
1 Medium Onion diced
1 can Diced Tomatoes 14 oz can
2 cups Beef Broth
1 teaspoon Salt
1 teaspoon Pepper
2 teaspoons Italian Seasoning
1 teaspoon Onion Powder
2 teaspoons Minced Garlic

Instructions

Add the ground beef, potatoes, carrots and onions to a crock pot.
In a medium size mixing bowl, stir together the diced tomatoes, broth, salt, pepper, Italian seasoning, onion powder and minced garlic.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the potatoes are tender.
Serve warm and enjoy!

Notes

  • Browning the Beef: While it’s possible to add raw ground beef directly to the Crock Pot, browning it first brings out more flavor and removes extra grease, making the stew richer and less oily.
  • Vegetable Variations: This recipe is flexible with vegetables; feel free to add bell peppers, mushrooms, or celery for more depth. Just be mindful that more vegetables may require slightly more broth to maintain the stew’s consistency.
