  • 2 cups diced ham

  • ½ cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ cup chopped fresh parsley (optional, for garnish)

Instructions

  • Preparation:
    Dice the potatoes into uniform pieces, chop the ham, onion, and mince the garlic. Prepping all your ingredients beforehand makes the process quicker and smoother.
  • Mix Ingredients:
    In a large bowl, combine diced potatoes, ham, and chopped onion. In a separate bowl, whisk together the cream of mushroom soup, shredded cheddar cheese, milk, sour cream, minced garlic, salt, pepper, and paprika until well combined.
  • Layer in the Crockpot:
    Spray the inside of the crockpot with non-stick cooking spray. Add half of the potato and ham mixture to the bottom of the crockpot. Pour half of the sauce over the top, ensuring even distribution. Repeat with the remaining potatoes, ham, and sauce.
  • Cook:
    Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are tender and the casserole is bubbly.
  • Serve:
    Stir the casserole gently before serving to ensure all the ingredients are mixed well. Garnish with chopped fresh parsley for added freshness if desired.

  • Potatoes: Using high-starch potatoes like Russet or Yukon Gold will give the casserole a creamier texture. Cut them evenly to ensure they cook uniformly.
