Deep Fried S’mores

  • Author: Naomi
  • Total Time: 1 hour
  • Yield: s’mores bites

Description

This recipe takes the classic campfire s’more to an indulgent new level by adding a crispy, golden exterior through deep frying. Perfect for those who love the nostalgic taste of s’mores but want something a bit more decadent, these treats combine the gooey marshmallow, melty chocolate, and crunchy graham crackers with a rich batter that fries up beautifully.

Ingredients

9 sheets of graham crackers
2 extra-large chocolate bars (e.g., Hershey’s Dark 4.25 oz)
1/2 cup chocolate chips (or an additional chocolate bar)
20-24 large marshmallows (preferably rectangular “Stackers”)
1 large egg
1 tsp oil
3/4 cup milk
1 cup + 2 tbsp all-purpose flour
3 tbsp granulated sugar
1/2 tsp baking powder
1/8 tsp salt
1 quart frying oil (for deep frying)
Candy thermometer

Instructions

Prep the S’more: Line an 8×8-inch pan with cling wrap. Place graham crackers as the first layer. Spread melted chocolate chips, then add chocolate bars, more melted chocolate, and top with marshmallows. Finish with another layer of graham crackers. Chill to set.
Make Batter: Whisk together the egg, 1 tsp oil, and milk. In another bowl, mix flour, sugar, baking powder, and salt. Combine the wet and dry ingredients until smooth.
Cut and Prep S’mores: Once set, cut the giant s’more into 36 squares. Keep refrigerated until ready to fry.
Frying: Heat oil to 375°F in a saucepan. Dip each s’more square into the batter, ensuring a good coat, and deep fry in batches until golden, about 2 minutes. Drain on paper towels.
Serve: Best enjoyed warm and gooey. Serve immediately after frying for the best taste and texture.

Notes

  • Batter Consistency: The key to the perfect deep fried s’more is the batter. It should be thick enough to adhere to the s’more but not so thick that it becomes doughy when fried. Adjust the milk and flour as needed to achieve a pancake batter-like consistency.
  • Oil Temperature: Maintaining the right oil temperature (375°F/190°C) is crucial. If the oil is too hot, the batter will burn before the inside is warm; if it’s too cold, the s’mores will absorb too much oil and become greasy.
  • Safety First: When working with hot oil, always use caution. Keep a kitchen fire extinguisher nearby, and never leave the hot oil unattended.
  • Serving Suggestion: Serve the deep fried s’mores immediately after frying for the best texture. They pair wonderfully with ice cream or a dusting of powdered sugar.
  • Allergy Alternatives: For gluten-free options, substitute with gluten-free graham crackers and ensure that your other ingredients are gluten-free. Vegan versions can substitute with vegan marshmallows and chocolate, and use an appropriate egg replacer in the batter.
  • Kid-Friendly Fun: Let kids help with assembling the s’mores or choosing ingredients to customize their treats. Always have an adult handle the frying process to ensure safety.
