Ingredients
• 12 oz wide rice noodles
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 small onion, sliced
• 1 bell pepper, sliced
• 1 zucchini, sliced
• 1 cup cherry tomatoes, halved
• 1 tsp dried basil
• 1 tsp dried oregano
• ¼ tsp red pepper flakes (optional)
• ½ cup chicken broth
• ¼ cup white wine
• 2 tbsp balsamic vinegar
• 2 tbsp soy sauce
• Salt and pepper to taste
• Fresh basil leaves, chopped (for garnish)
Instructions
1️⃣ Cook the rice noodles: Cook the rice noodles according to the package instructions. Once cooked, drain and set aside.
2️⃣ Sauté aromatics: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sliced onion, sautéing them for about 3-4 minutes until softened and fragrant.
3️⃣ Add vegetables: To the skillet, add the bell pepper, zucchini, and cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
4️⃣ Season the veggies: Stir in the dried basil, oregano, and red pepper flakes (if using). Let it cook for an additional 1 minute to infuse the flavors.
