  • For the packets:

    • 1 lb boneless, skinless chicken thighs or breasts, cut into 1” pieces

    • 2 cups pineapple chunks (fresh or canned, drained)

    • 1 bell pepper (red or yellow), cut into 1″ pieces

    • ½ small onion, cut into wedges

    • 1 tbsp sesame seeds (optional garnish)

    • 2 green onions, sliced (optional garnish)

  • Teriyaki Marinade/Dipping Sauce:

    • ½ cup teriyaki sauce

    • 2 tbsp honey or brown sugar

    • 1 tbsp rice vinegar or lime juice

    • 2 garlic cloves, minced

    • 1 tsp fresh ginger, grated (or ½ tsp ground ginger)

    • 1 tsp sesame oil (optional)


Instructions

1️⃣ Prep the foil:
Tear four sheets of heavy-duty aluminum foil (about 12″x12″). Lightly spray or brush the centers with oil to prevent sticking.

2️⃣ Combine ingredients:
In a mixing bowl, whisk teriyaki sauce, honey, vinegar, garlic, ginger, and sesame oil. Add chicken, pineapple, bell pepper, and onion—toss until everything is evenly coated.

3️⃣ Assemble packets:
Divide the mixture evenly into the centers of each foil sheet. Fold foil over to create sealed packets—fold the sides firmly to lock in steam.

4️⃣ Cook:

  • Grill method: Preheat grill to medium-high. Place packets on grill and cook for 15–20 minutes, flipping halfway, until chicken is cooked through (internal temp 165 °F).

  • Oven method: Preheat oven to 400 °F (200 °C). Place packets on a baking sheet and bake for 20–25 minutes until chicken is tender.

5️⃣ Finish and serve:
Open packets carefully to release steam. Sprinkle with sesame seeds and green onions. Serve right in the packets or over rice or quinoa for a complete meal.

Notes

  • Veggies: Add zucchini, snap peas, or carrots in similar size.

  • Heat level: Toss in red pepper flakes or diced jalapeño for spice.
