This Easy Burrito Bake Casserole is the perfect hearty, comforting meal for busy weeknights or casual family dinners. Packed with seasoned beef, beans, cheese, and tortillas, it delivers all the flavors of your favorite burrito — baked into one simple, delicious dish.

For the filling:

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)

  • 1 cup cooked rice (optional for extra heartiness)

  • Salt and pepper to taste

For assembling:

  • 6 medium flour tortillas

  • 2 cups shredded cheddar or Mexican blend cheese

  • 1 (10 oz) can enchilada sauce or salsa

  • ½ cup sour cream (optional, for topping)

  • Chopped fresh cilantro (optional, for garnish)


Instructions

1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2️⃣ Cook the beef filling:
In a large skillet over medium heat, cook ground beef and chopped onion until browned and cooked through. Drain excess fat if needed. Add minced garlic and cook for 1 minute. Stir in taco seasoning, black beans, diced tomatoes, cooked rice (if using), and season with salt and pepper. Simmer for 3-4 minutes.

3️⃣ Layer the casserole:
Spread a thin layer of enchilada sauce or salsa on the bottom of the prepared baking dish.
Place 2 tortillas over the sauce (they can overlap slightly), then layer with ⅓ of the meat mixture and ⅓ of the shredded cheese. Repeat layers until all ingredients are used, finishing with cheese on top.

4️⃣ Bake:
Cover with foil and bake for 20 minutes. Remove the foil and bake an additional 10 minutes until cheese is melted and bubbly.

5️⃣ Garnish and serve:
Let cool for a few minutes. Slice into portions and serve topped with sour cream and chopped cilantro if desired.

Notes

  • You can substitute refried beans or pinto beans for the black beans.

  • For extra heat, add jalapeños or hot sauce to the filling.

  • Leftovers reheat wonderfully and make great next-day lunches.
