This cozy soup transforms the classic stuffed cabbage roll into a warm, satisfying bowl. With ground beef, tender cabbage, rice, and a rich tomato broth, it’s a comforting meal that’s easy to make and full of flavor.
Ingredients
- For the soup:
- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 4 cups chopped green cabbage
- 1 large carrot, diced
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef broth (or chicken/vegetable broth)
- ½ cup uncooked white rice
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- For garnish (optional):
- Chopped parsley
- A dollop of sour cream
Instructions
1️⃣ Cook the beef: In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
2️⃣ Sauté aromatics: Add chopped onion and garlic to the beef. Cook for 3–4 minutes until softened and fragrant.
3️⃣ Add vegetables and liquids: Stir in the cabbage, carrot, diced tomatoes, tomato sauce, and beef broth. Mix well.
4️⃣ Add rice and seasonings: Add the uncooked rice, paprika, oregano, salt, and pepper. Stir to combine.
5️⃣ Simmer: Bring the soup to a boil, then reduce the heat. Cover and simmer for 25–30 minutes, or until the rice and cabbage are tender.
6️⃣ Serve: Taste and adjust seasoning if needed. Ladle into bowls and garnish with parsley or a spoon of sour cream if desired. Serve hot!
