Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced

  • 2 cups cooked white or brown rice

  • 2 cups broccoli florets (steamed or blanched)

  • 1 can (10.5 oz) cream of chicken soup

  • ½ cup sour cream

  • 1 cup shredded cheddar cheese (plus extra for topping)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper to taste

  • ¼ cup milk (optional, to thin out the sauce if needed)

  • ½ cup crushed Ritz crackers or breadcrumbs (optional topping)

  • 1 tbsp melted butter (for topping)

Instructions

1️⃣ Preheat oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2️⃣ Mix the base:
In a large bowl, combine cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until smooth.

3️⃣ Add the main ingredients:
Fold in cooked chicken, rice, broccoli, and 1 cup shredded cheese. Add milk if the mixture is too thick.

4️⃣ Transfer to dish:
Spread the mixture evenly in the prepared baking dish.

5️⃣ Add toppings:
Sprinkle with additional cheese. For a crunchy topping, mix crushed crackers with melted butter and sprinkle over the top.

6️⃣ Bake:
Bake uncovered for 25–30 minutes, or until hot and bubbly and the top is golden.

7️⃣ Serve:
Let cool slightly and serve warm. Pairs perfectly with a simple green salad or rolls.
