A zesty, garlicky twist on classic pasta—this Chicken Scampi is tossed in a buttery lemon-garlic sauce with tender chicken and colorful bell peppers. A simple yet irresistible dinner favorite.
Ingredients
For the chicken:

2 boneless, skinless chicken breasts, sliced into strips

1 tbsp olive oil

Salt and pepper to taste

½ tsp paprika
For the scampi sauce:

2 tbsp butter

4 garlic cloves, minced

½ cup chicken broth
-
Juice of 1 lemon

½ tsp red pepper flakes (optional)

1 tbsp chopped parsley
For the pasta:

12 oz angel hair or spaghetti

Water for boiling

Salt for pasta water

1 cup bell peppers (red, yellow, or green), thinly sliced
Instructions
1️⃣ Cook the pasta:
Boil salted water in a large pot. Add pasta and cook until al dente. Drain and set aside.
2️⃣ Sauté the chicken:
Season chicken strips with salt, pepper, and paprika. Heat olive oil in a large skillet over medium heat. Cook chicken for 5–6 minutes until golden and cooked through. Remove and set aside.
3️⃣ Make the scampi sauce:
In the same skillet, melt butter. Add garlic and sauté for 1–2 minutes until fragrant.
4️⃣ Add broth and lemon:
Pour in chicken broth and lemon juice. Stir well. Simmer for 2–3 minutes, then add red pepper flakes if using.
5️⃣ Cook the peppers:
Toss in bell peppers and cook for another 2–3 minutes until slightly tender.
6️⃣ Combine:
Return chicken to the skillet, add cooked pasta, and toss everything together until evenly coated.
7️⃣ Garnish and serve:
Sprinkle with fresh parsley and serve hot!
