Ingredients
For the cookies:

1 cup all-purpose flour

Instructions
1️⃣ Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2️⃣ In a small bowl, whisk together flour, baking powder, and salt.
3️⃣ In a large bowl, beat softened butter and granulated sugar until creamy. Add egg and vanilla extract and mix well.
4️⃣ Gradually add the flour mixture to the wet ingredients, mixing until just combined.
5️⃣ Fold in the chopped peaches gently.
6️⃣ In another bowl, combine flour, brown sugar, and cinnamon for the crumble topping. Cut in the cold butter with a fork or pastry cutter until mixture resembles coarse crumbs.
7️⃣ Drop tablespoon-sized scoops of cookie dough onto the baking sheet, spacing about 2 inches apart.
8️⃣ Sprinkle crumble topping evenly over each cookie.
9️⃣ Bake for 12-15 minutes or until edges are lightly golden.
