  • 1 lb ground beef

  • 1 packet taco seasoning mix

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup frozen corn kernels

  • 1 cup salsa

  • 1 cup sour cream

  • 2 cups shredded Mexican blend cheese

  • 3 cups tortilla chips, slightly crushed

  • Optional toppings: sliced jalapeños, chopped green onions, sliced olives, fresh cilantro


Instructions

1️⃣ Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2️⃣ In a large skillet, cook ground beef over medium heat until browned and cooked through. Drain excess fat.

3️⃣ Stir in taco seasoning, black beans, corn, and salsa. Cook for 2-3 minutes until heated through.

4️⃣ Remove from heat and stir in sour cream and 1 cup of shredded cheese.

5️⃣ Spread half of the crushed tortilla chips in the bottom of the prepared baking dish.

6️⃣ Layer the beef mixture over the chips, then top with the remaining tortilla chips.

7️⃣ Sprinkle the remaining 1 cup of shredded cheese evenly on top.

8️⃣ Bake for 20-25 minutes, until cheese is melted and bubbly.

9️⃣ Remove from oven and garnish with your favorite toppings before serving.

Notes

  • For extra spice, add chopped jalapeños or hot sauce to the beef mixture.

  • Serve with guacamole, sour cream, or extra salsa on the side.
