Ingredients
For the sausage gravy:

1 lb breakfast sausage

2 tbsp butter

¼ cup all-purpose flour

2 cups whole milk

½ tsp garlic powder

½ tsp onion powder

Salt and black pepper to taste
For the puff pie:

1 box (2 sheets) frozen puff pastry, thawed

1 large egg (for egg wash)

1 tbsp water

Instructions
1️⃣ Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Cook the sausage:
In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until browned and fully cooked. Drain excess grease if needed.
3️⃣ Make the gravy:
Add butter to the cooked sausage. Once melted, sprinkle in the flour and stir well to coat the sausage. Cook for 1-2 minutes. Gradually add the milk, stirring constantly until smooth. Simmer for 3-5 minutes until thickened. Stir in garlic powder, onion powder, salt, and pepper. Remove from heat and let cool slightly.
4️⃣ Prepare the puff pastry:
On a lightly floured surface, roll out each sheet of puff pastry slightly to even thickness. Place one sheet on the prepared baking sheet.
5️⃣ Assemble the pie:
Spoon the cooled sausage gravy evenly onto the center of the bottom pastry sheet, leaving a 1-inch border around the edges.
6️⃣ Top and seal:
Place the second sheet of puff pastry over the filling. Press the edges together and crimp with a fork to seal. Cut a few small slits in the top for steam to escape.
7️⃣ Egg wash:
Beat the egg with 1 tablespoon of water and brush the top of the pastry with the egg wash.
8️⃣ Bake:
Bake for 25-30 minutes, or until the puff pastry is golden brown and fully cooked.
9️⃣ Garnish and serve:
Let cool for a few minutes before slicing. Garnish with chopped parsley if desired, and serve warm.
