Ingredients
For the pie:

1 (9-inch) pre-baked pie crust (store-bought or homemade)

4 large ripe tomatoes, sliced

1 tsp salt (for draining tomatoes)

½ cup mayonnaise

1 cup shredded sharp cheddar cheese

½ cup shredded mozzarella cheese

2 green onions, finely chopped

2 tbsp fresh basil, chopped (or 1 tsp dried basil)

½ tsp black pepper

1 tbsp grated Parmesan cheese (optional, for topping)
Instructions
1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C).
2️⃣ Prep the tomatoes:
Lay the tomato slices on paper towels and sprinkle with salt. Let sit for 20-30 minutes to draw out excess moisture. Pat dry with more paper towels to prevent a soggy pie.
3️⃣ Make the filling:
In a medium bowl, mix together the mayonnaise, cheddar cheese, mozzarella cheese, green onions, basil, and black pepper until well combined.
4️⃣ Assemble the pie:
Layer the tomato slices evenly in the pre-baked pie crust. Spoon the cheese mixture on top, spreading it evenly to cover the tomatoes.
5️⃣ Top and bake:
Sprinkle with grated Parmesan if using. Bake for 30-35 minutes, or until the top is golden brown and bubbly.
6️⃣ Cool and serve:
Allow to cool for at least 15 minutes before slicing. Serve warm or at room temperature.
