Description

These Easy Strawberry Butter Swim Biscuits are soft, fluffy, and incredibly rich thanks to the butter bath they “swim” in while baking. With sweet strawberry flavor throughout, they’re perfect for breakfast, brunch, or dessert!

For the biscuits:

  • 2 ½ cups all-purpose flour

  • 2 tbsp granulated sugar

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 ½ cups buttermilk

  • ½ cup strawberry preserves or jam

  • 1 stick (½ cup) unsalted butter, melted

For topping (optional):

  • 2 tbsp strawberry preserves (warmed, for brushing)

  • Powdered sugar for dusting

  • Fresh strawberries for garnish


Instructions

1️⃣ Preheat the oven:
Preheat your oven to 450°F (230°C). Lightly grease an 8×8-inch or 9×9-inch baking dish.

2️⃣ Prepare the biscuit batter:
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the buttermilk and strawberry preserves, gently stirring until just combined. Do not overmix.

3️⃣ Melt the butter:
Pour the melted butter into the bottom of the prepared baking dish.

4️⃣ Add the batter:
Spoon the biscuit batter evenly over the melted butter. Gently spread it out to fill the dish. The butter will rise around the edges — that’s what gives the “swim” effect.

5️⃣ Score the dough:
Using a sharp knife, lightly score the top of the dough into 9 equal squares. This helps the biscuits bake more evenly and makes cutting easier after baking.

6️⃣ Bake:
Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

7️⃣ Brush and serve:
If desired, brush the top with warmed strawberry preserves for a glossy finish. Allow to cool slightly, then dust with powdered sugar and serve with fresh strawberries.

Notes

  • For even more strawberry flavor, fold in ½ cup of chopped fresh strawberries to the batter.

  • If you don’t have buttermilk, you can substitute with 1 ½ cups of milk + 1 tbsp lemon juice or vinegar.

  • These are best served warm but can be stored for up to 2 days in an airtight container.
