The Forgotten Chicken Casserole, also known as No-Peek Chicken and Rice Casserole, is a delicious and easy-to-make dish that combines tender chicken, creamy soups, and fluffy rice. Its simplicity and comfort make it a favorite among families. Ingredients

  • 1 lb Boneless, Skinless Chicken Breasts

  • 2 cups Minute Rice (Brown)

  • 1 can Cream of Chicken Soup

  • 1 can Cream of Mushroom Soup

  • 1 can Water (use one of the soup cans)

  • 1 tablespoon Butter

  • 1 envelope Lipton Onion Soup Mix


Instructions

Preparation of Baking Pan

  • Butter the Pan: Using the tablespoon of butter, generously butter a 9×13 baking pan to prevent sticking.

Mixing Soup and Rice

  • Combine Ingredients: In a medium bowl, mix together the cream of mushroom soup, cream of chicken soup, one can of water, and Minute rice until well combined.

Assembling the Casserole

  • Layering: Pour the soup and rice mixture into the buttered baking pan.
  • Add Chicken: Arrange the boneless, skinless chicken breasts on top of the rice mixture.
  • Seasoning: Sprinkle the Lipton onion soup mix evenly over the chicken breasts.

Baking Process

  • Cover and Bake: Cover the baking pan with foil and place it in a preheated oven at 350°F (175°C).
  • Cooking Time: Bake for approximately 1 to 1 1/2 hours, or until the chicken is cooked through and the rice is tender.
