  • 2 cups frozen tater tots
  • 2 tablespoons olive oil
  • 8 links breakfast sausage, casing removed
  • 8 large eggs, lightly beaten
  • ⅓ cup half and half
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (16-ounce) can refried beans
  • 8 8-inch flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 Roma tomatoes, diced
  • ¼ cup chopped fresh cilantro leaves

Instructions

  • Preheat and Prepare Tater Tots:
    • Preheat your oven to 400°F (200°C). Lightly oil a baking sheet or coat it with nonstick spray.
    • Cook the tater tots according to the package instructions, usually for about 20-25 minutes, until they are golden brown and crispy. Set aside.
  • Cook the Sausage:
    • Heat the olive oil in a large skillet over medium-high heat. Add the breakfast sausage, breaking it apart with a spatula as it cooks.
    • Cook the sausage for 3-5 minutes, until fully browned. Drain excess fat, leaving about 1 tablespoon in the skillet.
  • Cook the Eggs:
    • In the same skillet, add the beaten eggs. Cook over medium heat, stirring frequently to scramble.
    • When the eggs just begin to set, stir in the half and half. Season with salt and pepper to taste.
    • Continue cooking until the eggs are fully cooked and creamy, about 3-5 minutes. Set aside.
  • Assemble the Burritos:
    • Spread a thin layer of refried beans down the center of each tortilla.
    • Top with tater tots, cooked sausage, scrambled eggs, shredded cheddar and Monterey Jack cheeses, diced tomatoes, and chopped cilantro.
    • Fold in the sides of the tortilla, then roll it up tightly to form a burrito.
  • Bake or Store:
    • If serving immediately, place the burritos seam-side down on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, until heated through and the cheese is melted.
    • To freeze, wrap each burrito in plastic wrap or aluminum foil and place them in a resealable freezer bag. Freeze for up to 3 months.
  • Reheat:
    • To reheat from frozen, unwrap the burrito and microwave on high for 1-2 minutes per side, or until heated through. For a crispier texture, reheat in a skillet or oven after microwaving.

These burritos are highly customizable. Feel free to substitute the sausage with bacon, ham, or plant-based sausage for a vegetarian option.
