These French Onion Potatoes are rich, savory, and packed with the classic flavors of French onion soup. Caramelized onions, melted cheese, and tender potatoes come together to create a comforting and irresistible side dish perfect for any meal!
Ingredients
For the potatoes:

2 lbs Yukon Gold or Russet potatoes, peeled and sliced ¼ inch thick

2 large yellow onions, thinly sliced

3 tbsp butter

1 tbsp olive oil

1 tsp sugar (optional, for faster caramelization)

1 tsp garlic powder

1 cup shredded Gruyère or Swiss cheese

½ cup shredded mozzarella cheese

½ cup beef broth (or vegetable broth)

Salt and pepper to taste

1 tbsp fresh thyme or 1 tsp dried thyme

2 tbsp chopped fresh parsley (for garnish)
Instructions
1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2️⃣ Caramelize the onions:
In a large skillet, melt butter with olive oil over medium heat. Add sliced onions and cook, stirring frequently, for 20-25 minutes until golden and caramelized. If desired, sprinkle with sugar to help speed up the process. Season with a pinch of salt and thyme.
3️⃣ Prepare the potatoes:
While the onions cook, slice the potatoes into even rounds about ¼ inch thick. Pat dry with paper towels to remove excess moisture.
4️⃣ Layer the dish:
In the prepared baking dish, arrange half of the sliced potatoes. Season with garlic powder, salt, and pepper. Spread half of the caramelized onions over the potatoes, sprinkle half of both cheeses, and repeat the layers.
5️⃣ Add the broth:
Carefully pour the beef broth over the layers to keep the dish moist while baking.
6️⃣ Bake:
Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for an additional 20-25 minutes, or until the potatoes are tender and the top is golden and bubbly.
7️⃣ Garnish and serve:
Remove from the oven, let cool slightly, garnish with chopped parsley, and serve warm.
