Garlic Butter Bacon Cheeseburger Roll Ups on Crescent Dough

Description

All the flavors of a bacon cheeseburger—juicy seasoned beef, crispy bacon, melty cheddar, and a hit of garlic butter—wrapped up in soft, golden crescent dough. These roll-ups bake to perfection in under 25 minutes and make a fantastic party appetizer or a fun weeknight dinner.

For the Filling

  • 1 lb (450 g) ground beef (80/20 blend)

  • 4 slices bacon, diced

  • 2 Tbsp unsalted butter

  • 3 garlic cloves, minced

  • 1 Tbsp Worcestershire sauce

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • Salt & freshly ground black pepper, to taste

  • 1 cup shredded sharp cheddar cheese

  • 2 Tbsp finely chopped green onions (optional)

For the Dough & Finish

  • 2 cans (8 oz each) refrigerated crescent roll dough

  • 2 Tbsp melted butter

  • 1 tsp garlic powder

  • 1 Tbsp chopped fresh parsley (optional, for garnish)

  • Hamburger pickles, ketchup & mustard, for serving (optional)


Instructions

1️⃣ Cook the bacon & beef:
In a large skillet over medium heat, cook diced bacon until crisp, about 5 minutes. Using a slotted spoon, transfer bacon to a paper-towel–lined plate, leaving the fat in the pan. Add ground beef and cook, breaking up with a spoon, until no pink remains, about 6–7 minutes. Drain any excess fat.

2️⃣ Make it garlicky:
Push the beef to one side of the skillet. Add butter to the cleared space and let it melt. Stir in minced garlic, Worcestershire, onion powder, smoked paprika, and a generous pinch of salt & pepper. Cook 1 minute until fragrant, then stir into the beef and remove from heat. Stir in crisp bacon, cheddar, and green onions.

3️⃣ Prep the dough:
Preheat oven to 375 °F (190 °C). Line a baking sheet with parchment. Unroll each can of crescent dough and press perforations to form two 9×5″ rectangles.

4️⃣ Assemble the roll-ups:
Spread half of the beef mixture lengthwise down the center of each dough rectangle, leaving a ½″ border. Starting at one long edge, tightly roll up the dough over the filling. Pinch the seam to seal. Slice each log into 8 even rolls.

5️⃣ Bake to golden:
Place rolls cut-side up on the prepared sheet, spacing 1″ apart. Brush with melted butter and sprinkle with garlic powder. Bake 12–15 minutes, until crescent dough is puffed and deep golden.

6️⃣ Garnish & serve:
Remove from oven and let cool 2 minutes. Sprinkle with parsley if desired, and serve warm with pickles, ketchup, and mustard on the side.

Notes

  • Make-Ahead: Assemble rolls on the baking sheet, cover, and refrigerate up to 4 hours; bake straight from the fridge (add 2 minutes to bake time).

  • Cheese Variations: Swap cheddar for pepper jack or a Mexican-blend cheese for extra kick.

  • Spice It Up: Stir in ¼ tsp cayenne or a few dashes of hot sauce to the beef mixture.

  • Gluten-Free Option: Use a gluten-free crescent–style dough and check your Worcestershire sauce is GF.

  • Leftovers: Store cooled rolls in an airtight container in the fridge up to 3 days. Reheat in a 350 °F oven for 5 minutes to refresh the crisp edges.
