  • Total Time: 45 min

Description

This casserole layers tender green beans, savory ground beef, creamy sauce, and melty cheese—all topped with crunchy onions—for a filling, crowd-pleasing side or main dish that warms hearts and bellies.

Ingredients

Scale
  • For the beef and beans:

    • 1 lb ground beef

    • 1 medium onion, diced

    • 2 garlic cloves, minced

    • 3 cups cooked or canned green beans, drained

    • 1 tsp Worcestershire sauce (optional)

    • Salt and pepper, to taste

  • For the creamy sauce:

    • 1 can (10.5 oz) cream of mushroom soup

    • ½ cup sour cream

    • ¼ cup milk (or more for desired consistency)

    • ½ tsp onion powder

    • ½ tsp garlic powder

    • Salt and pepper, to taste

  • Cheese & topping:

    • 1 cup shredded cheddar cheese (plus extra for topping)

    • 1 cup crispy fried onions (French-fried onions like French’s)

Instructions

1️⃣ Preheat oven:
Preheat your oven to 350 °F (175 °C). Grease a 9×13-inch baking dish.

2️⃣ Cook the beef:
In a large skillet over medium-high heat, cook ground beef until browned, breaking up with a spoon. Drain excess fat.

3️⃣ Add aromatics:
Add diced onion and minced garlic to the beef. Cook 3–4 minutes, until softened. Stir in Worcestershire sauce if using. Season with salt and pepper.

4️⃣ Combine sauce ingredients:
In a bowl, whisk together cream of mushroom soup, sour cream, milk, onion powder, garlic powder, salt, and pepper.

5️⃣ Assemble the casserole:
In the prepared dish, layer green beans and beef mixture. Pour the creamy sauce evenly over the top, then sprinkle with shredded cheddar cheese.

6️⃣ Bake:
Bake uncovered for 20 minutes, or until cheese is bubbly and the casserole is heated through.

7️⃣ Add crispy onions:
Remove from oven, sprinkle the fried onions over the top, and return to the oven for an additional 5 minutes to warm the topping.

8️⃣ Serve:
Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

  • Make-ahead: Cover and refrigerate for up to 24 hours before baking—just add a few extra minutes of baking time.

  • Veggie boost: Mix in sliced mushrooms or bell peppers with the aromatics.

  • Cream of veg alternative: Try cream of chicken or celery soup for a different flavor.

  • Low-fat option: Use lean ground beef or turkey, and swap Greek yogurt for sour cream.
