For the Garlic Mushrooms

  • 8 oz (225 g) cremini or button mushrooms, sliced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 tsp fresh thyme leaves (or ¼ tsp dried thyme)

  • Salt and freshly ground black pepper, to taste

  • Pinch of red pepper flakes (optional)

For the Avocado Mash

  • 2 ripe avocados

  • 1 tbsp fresh lemon or lime juice

  • 12 tbsp finely chopped cilantro or parsley

  • Salt and pepper, to taste

For the Toast

  • 4 slices of sturdy bread (sourdough, multigrain, or country loaf)

  • 12 tbsp olive oil or butter, for brushing

Garnish (Optional)

  • Flaky sea salt

  • Extra herb leaves (cilantro, parsley, or microgreens)

  • Drizzle of extra-virgin olive oil or chili oil


Instructions

1️⃣ Toast the bread:

  • Preheat a grill pan or skillet over medium-high heat. Brush each bread slice lightly with olive oil or butter.

  • Toast until golden and crisp on both sides, about 2 minutes per side. Transfer to a plate.

2️⃣ Sauté the mushrooms:

  • In the same pan, melt butter with olive oil over medium heat. Add garlic and thyme; cook 30 seconds until fragrant.

  • Add sliced mushrooms in a single layer. Season with salt, pepper, and red pepper flakes (if using).

  • Cook, stirring occasionally, until mushrooms release their juices and turn golden, about 6–8 minutes. Remove from heat.

3️⃣ Prepare the avocado mash:

  • Halve and pit the avocados. Scoop flesh into a bowl and mash with lemon juice until slightly chunky.

  • Fold in chopped herbs and season with salt and pepper to taste.

4️⃣ Assemble the toasts:

  • Spread a generous layer of avocado mash onto each toasted bread slice.

  • Top evenly with warm garlic mushrooms.

5️⃣ Garnish & serve:

  • Finish with a sprinkle of flaky sea salt, extra herbs, and a light drizzle of olive or chili oil if desired.

  • Serve immediately while the toast remains crisp and mushrooms still warm.

Notes

  • Spicy kick: Mix ½ tsp smoked paprika into the mushrooms or drizzle sriracha over the finished toasts.

  • Cheesy addition: Top each toast with a sprinkle of crumbled feta or grated Parmesan before serving.
