Ingredients
For the Garlic Mushrooms

8 oz (225 g) cremini or button mushrooms, sliced

2 tbsp unsalted butter

1 tbsp olive oil

3 garlic cloves, minced

1 tsp fresh thyme leaves (or ¼ tsp dried thyme)

Salt and freshly ground black pepper, to taste

Pinch of red pepper flakes (optional)
For the Avocado Mash

2 ripe avocados
-
1 tbsp fresh lemon or lime juice
-
1–2 tbsp finely chopped cilantro or parsley

Salt and pepper, to taste
For the Toast
-
4 slices of sturdy bread (sourdough, multigrain, or country loaf)

1–2 tbsp olive oil or butter, for brushing
Garnish (Optional)

Flaky sea salt
-
Extra herb leaves (cilantro, parsley, or microgreens)

Drizzle of extra-virgin olive oil or chili oil
Instructions
1️⃣ Toast the bread:

Preheat a grill pan or skillet over medium-high heat. Brush each bread slice lightly with olive oil or butter.

Toast until golden and crisp on both sides, about 2 minutes per side. Transfer to a plate.
2️⃣ Sauté the mushrooms:

In the same pan, melt butter with olive oil over medium heat. Add garlic and thyme; cook 30 seconds until fragrant.

Add sliced mushrooms in a single layer. Season with salt, pepper, and red pepper flakes (if using).

Cook, stirring occasionally, until mushrooms release their juices and turn golden, about 6–8 minutes. Remove from heat.
3️⃣ Prepare the avocado mash:

Halve and pit the avocados. Scoop flesh into a bowl and mash with lemon juice until slightly chunky.

Fold in chopped herbs and season with salt and pepper to taste.
4️⃣ Assemble the toasts:

Spread a generous layer of avocado mash onto each toasted bread slice.

Top evenly with warm garlic mushrooms.
5️⃣ Garnish & serve:

Finish with a sprinkle of flaky sea salt, extra herbs, and a light drizzle of olive or chili oil if desired.

Serve immediately while the toast remains crisp and mushrooms still warm.
