Description

These Lazy Cake Cookies made with spice cake mix are the definition of simple and delicious. With warm spices, gooey white chocolate, and optional crunchy nuts, they come together in one bowl with no fuss. Soft, chewy, and full of fall flavor, these cookie bars are perfect for when you want a homemade dessert without the hassle.

Ingredients

Scale
  • 1 box spice cake mix (15.25 oz)

  • 2 large eggs

  • ½ cup vegetable oil

  • 1 cup white chocolate chips (or cinnamon chips)

  • ½ cup chopped pecans or walnuts (optional)

Instructions

1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line with parchment paper.

2️⃣ Mix the dough: In a large bowl, combine the spice cake mix, eggs, and oil. Stir until a thick dough forms.

3️⃣ Add mix-ins: Fold in the white chocolate chips and nuts if using. Mix until evenly distributed.

4️⃣ Press into pan: Spread the dough evenly into the prepared baking dish. It will be thick, so use a spatula or your hands to press it down.

5️⃣ Bake: Bake for 20–25 minutes, or until the edges are golden and the center is set.

6️⃣ Cool and slice: Allow to cool completely before slicing into bars or squares. Enjoy!

Notes

  • Change it up: Try using chocolate chips, butterscotch chips, or even dried cranberries for a flavor twist.

  • Don’t overbake: These bars stay soft and chewy if you pull them out just as the center sets.

  • Store well: Keep in an airtight container at room temperature for up to 5 days—or freeze for longer storage.
