  • Author: Naomi
  • Total Time: 15 min

Description

These fuss-free cookies come together in minutes with just one bowl and four pantry staples. No chilling, no mixers—just a simple blend of peanut butter, sugar, egg, and chocolate chips for soft, chewy treats. Perfect for when you crave homemade cookies without the effort!

Ingredients

Scale
  • 1 cup (240 g) creamy peanut butter

  • 1 cup (200 g) granulated sugar (or brown sugar for deeper flavor)

  • 1 large egg, room temperature

  • 1 cup (175 g) chocolate chips

Instructions

1️⃣ Preheat & Prep:

  • Preheat your oven to 350 °F (175 °C).

  • Line a baking sheet with parchment paper or a silicone mat.

2️⃣ Mix the Base:

  • In a large bowl, combine peanut butter, sugar, and the egg.

  • Stir vigorously with a spatula (or wooden spoon) until mixture is smooth and uniform.

3️⃣ Add Chocolate Chips:

  • Fold in the chocolate chips until evenly distributed.

4️⃣ Portion the Dough:

  • Using a tablespoon or small cookie scoop, drop rounded mounds (about 1 Tbsp each) onto the prepared sheet, spacing them 2 inches apart.

  • (Optional) Press a few extra chips on top of each mound for a bakery-style look.

5️⃣ Bake:

  • Bake for 8–10 minutes, until edges are set but centers remain slightly soft.

  • Remove from oven and let cookies rest on the sheet for 5 minutes (they’ll firm up as they cool).

6️⃣ Cool & Enjoy:

  • Transfer cookies to a wire rack to cool completely, or serve warm for extra gooeyness!

Notes

  • Sugar Swap: Use all brown sugar or a 50/50 mix with granulated for a chewier texture and caramel notes.

  • Nut-Free Option: Substitute peanut butter with sunflower-seed butter.

  • Extra Crunch: Stir in ½ cup chopped nuts (peanuts, pecans, or almonds).

  • Flavor Boost: Add 1 tsp vanilla extract or a pinch of sea salt for depth.

  • Mini Cookies: For bite-sized treats, use ½ Tbsp dough portions and bake 7–8 minutes.

Enjoy these lazy, one-bowl delights whenever the cookie craving strikes!
