Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Bring a large pot of salted water to a boil. Add diced potatoes and cook for about 10 minutes until just fork-tender. Drain and set aside.

In a large mixing bowl, combine sour cream, cream of mushroom soup, cheddar cheese, green onions, garlic powder, salt, and pepper. Stir until well mixed.

Fold in the cooked potatoes and crumbled turkey bacon.

Pour the mixture into the prepared baking dish and spread it evenly.

Top with mozzarella cheese if using.
