No-Peek Chicken Casserole

  • Author: Kouider Walid Bentahar
  • Total Time: 1 hour 40 minutes
  • Yield: 8 servings 1x

Description

This No-Peek Chicken Casserole is a creamy, savory blend of chicken, rice, and flavorful soups, all baked to perfection in one pan. It’s called “no-peek” because, once covered, you let it bake undisturbed, allowing the ingredients to cook evenly and flavors to meld without any extra work.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (brown or white)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can of water (use soup can to measure)
  • 1 tablespoon butter (for greasing the pan)
  • 1 envelope Lipton Onion Soup Mix

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter to prevent sticking and add extra flavor.
  3. Combine the Minute Rice, cream of chicken soup, cream of mushroom soup, and water in a medium bowl. Mix well.
  4. Pour the rice and soup mixture into the prepared baking pan.
  5. Arrange the chicken breasts on top of the rice mixture.
  6. Sprinkle the Lipton Onion Soup Mix evenly over the chicken breasts.
  7. Cover the pan tightly with aluminum foil to trap steam, helping to cook the rice and keep the chicken tender.
  8. Bake in the preheated oven for 1 to 1.5 hours, or until the chicken is cooked through and rice is tender. Do not lift the foil during baking.
  9. Let the casserole rest for a few minutes before serving.

Notes

  • Rice Substitutions: If you prefer using regular rice instead of Minute Rice, increase the cooking time and the amount of water for proper rice texture.
  • Adding Vegetables: To make it a one-pan meal, consider adding chopped vegetables, like carrots or bell peppers, to the rice mixture before baking.
  • Healthier Option: For a lighter dish, use low-sodium or reduced-fat versions of the soups.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the oven or microwave.
