Ingredients
- 1 pound beef kielbasa, sliced into rounds
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 2 cups broccoli florets, chopped
- 1 1/2 cups shredded cheddar cheese
- Salt and black pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced beef kielbasa and cook until browned. Remove and set aside.
- In the same skillet, add the diced onion and cook until softened. Add garlic and sauté for about 30 seconds.
- Stir in the uncooked rice and cook for 1–2 minutes to lightly toast.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10 minutes.
- Add chopped broccoli to the skillet. Cover again and cook for another 5–7 minutes, or until the rice is tender and the broccoli is cooked.
- Return the cooked kielbasa to the skillet and stir everything together.
- Sprinkle the shredded cheddar cheese over the top. Cover and let sit for a few minutes until the cheese is melted.
- Season with salt and pepper to taste, then serve warm.
