Ingredients
For the meatloaf:
-
1 ½ lbs ground beef
-
1 cup onion, finely chopped
-
1 cup green bell pepper, finely chopped
-
2 cloves garlic, minced
-
1 cup shredded provolone or mozzarella cheese (for stuffing)
-
½ cup breadcrumbs
-
2 large eggs
-
¼ cup milk
-
2 tbsp Worcestershire sauce
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp dried oregano
-
1 tsp dried basil
Instructions
1️⃣ Preheat oven:
Preheat to 350°F (175°C). Lightly grease a loaf pan or line with parchment paper.
2️⃣ Sauté veggies:
In a skillet over medium heat, sauté onions, green peppers, and garlic until softened, about 5 minutes. Let cool slightly.
3️⃣ Mix meatloaf base:
In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, oregano, and basil. Add the sautéed veggies and mix until just combined.
4️⃣ Assemble the loaf:
Divide the meat mixture in half. Press half into the bottom of the loaf pan. Layer the shredded cheese evenly over the meat. Top with the remaining meat mixture and gently press to seal.
5️⃣ Bake:
Bake uncovered for 1 hour or until meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
6️⃣ Rest and serve:
Let the meatloaf rest for 10 minutes before slicing to keep the cheese gooey inside. Serve warm.
