These Pistachio Pudding Sugar Cookie Bars are soft, chewy, and packed with pistachio flavor thanks to instant pudding mix. Ingredients
For the cookie bars:

1 cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 (3.4 oz) package instant pistachio pudding mix

2 cups powdered sugar

1–2 tbsp milk

½ tsp vanilla or almond extract

Instructions
1️⃣ Preheat oven: Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
2️⃣ Make the dough: In a large bowl, cream together butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well. Stir in the pistachio pudding mix until combined.
3️⃣ Add dry ingredients: Gradually mix in flour, baking soda, and salt until a soft dough forms.
4️⃣ Bake: Press the dough evenly into the prepared pan. Bake for 18–22 minutes, or until the edges are lightly golden. Let cool completely in the pan.
5️⃣ Make the frosting (optional): Beat the butter until creamy. Gradually add powdered sugar, then mix in milk and extract until smooth. Add green food coloring if desired.
6️⃣ Frost and garnish: Spread frosting over cooled bars and sprinkle with chopped pistachios.
7️⃣ Slice and serve: Cut into squares and enjoy!
