Ingredients
Scale
- 2 1/2 lbs baby creamer potatoes, halved
- 1 1/2 lbs beef smoked sausage, sliced into 1-inch pieces
- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 2 Tbsp olive oil
- 2 tsp Slap Ya Mama seasoning
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 4 Tbsp butter, cubed
Instructions
- Preheat the Oven
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with nonstick spray or olive oil. - Season the Potatoes
In a large bowl, toss the halved creamer potatoes with olive oil, ensuring they are evenly coated. Add the Slap Ya Mama seasoning, garlic powder, black pepper, and red pepper flakes, and toss again to distribute the spices evenly. - Add the Sausage and Vegetables
Add the sliced smoked sausage, diced onion, and diced bell pepper to the bowl with the seasoned potatoes. Gently toss everything together to ensure all the ingredients are well mixed and coated with the seasoning. - Assemble the Bake
Transfer the potato, sausage, and vegetable mixture into the greased baking dish, spreading it out in an even layer. Dot the top of the mixture with the cubed butter. - Bake Covered
Cover the dish tightly with foil and bake for 30 minutes to allow the potatoes to soften and the flavors to meld together. - Uncover and Finish Baking
After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are fork-tender and the top is golden and slightly crispy. - Let Rest and Serve
Remove the dish from the oven and allow it to rest for 5 minutes before serving. This gives the flavors time to set and makes the dish easier to serve.
Notes
- Choosing the Right Sausage: Smoked beef sausage is recommended for its bold flavor, but feel free to substitute with chicken, turkey, or pork sausage based on your taste preferences.
- Alternative Potatoes: You can swap baby creamer potatoes for Yukon gold or red potatoes if you prefer, but avoid russets as they may become too soft.
- Adding Vegetables: Feel free to add extra vegetables like zucchini, carrots, or Brussels sprouts to make the bake even more nutritious. Just ensure they are cut into similarly sized pieces to allow for even cooking.
- Make Ahead Tip: This dish can be assembled up to 24 hours in advance and stored in the refrigerator. Simply bring it to room temperature before baking.
- Customizing the Spice Level: Adjust the heat by adding more or less red pepper flakes, or swap in a milder seasoning blend if you prefer less spice.
