Description
This Cloud Bread is light and airy with a fluffy texture, made even more delicious with the addition of cottage cheese. It’s a great low-carb, gluten-free alternative to traditional bread, perfect for anyone looking to cut back on carbs without sacrificing taste and texture.
Ingredients
-
3 large eggs, separated
-
½ cup cottage cheese (preferably low-fat or full-fat)
-
¼ tsp cream of tartar
-
2 tbsp almond flour (optional for added texture)
-
1 tbsp olive oil (or melted butter)
-
1 tsp baking powder
-
½ tsp salt
-
1 tbsp honey or sweetener (optional, for a touch of sweetness)
-
1 tsp garlic powder (optional, for extra flavor)
Instructions
1️⃣ Preheat the Oven:
-
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat for easy removal.
2️⃣ Separate the Eggs:
-
Carefully separate the egg whites from the yolks into two separate bowls.
3️⃣ Prepare the Egg Whites:
-
Add the cream of tartar to the egg whites. Using an electric mixer or whisk, beat the egg whites until stiff peaks form. This will give the bread its airy texture.
4️⃣ Make the Egg Yolk Mixture:
-
In the bowl with the egg yolks, add the cottage cheese, olive oil (or melted butter), almond flour, baking powder, salt, and honey or sweetener (if using). Mix until well combined and smooth.
5️⃣ Fold the Mixtures Together:
-
Gently fold the beaten egg whites into the egg yolk mixture. Be careful not to deflate the egg whites; fold just until everything is combined. This is what gives cloud bread its fluffiness.
6️⃣ Form the Cloud Bread:
-
Spoon the mixture onto the prepared baking sheet, forming 6-8 small round mounds, about 2-3 inches in diameter. Use the back of the spoon to flatten the tops slightly. If you’re adding garlic powder, sprinkle it over the tops now.
7️⃣ Bake:
-
Bake the cloud bread in the preheated oven for 25-30 minutes, or until golden brown on top and firm to the touch. Keep an eye on them toward the end of baking to avoid over-browning.
8️⃣ Cool:
-
Let the cloud bread cool on a wire rack for 5-10 minutes before serving. This helps them firm up and become even more bread-like.
9️⃣ Serve:
-
Enjoy the cloud bread on its own or use it for sandwiches, burgers, or as a side with your meals. It pairs wonderfully with savory or sweet fillings!
Notes
-
Texture Tips: If you prefer a slightly denser texture, you can add a bit more almond flour. For an even lighter result, leave it out entirely.
-
Flavor Variations: For savory cloud bread, you can mix in some grated cheese, Italian herbs, or garlic powder. For a sweeter version, add a bit more honey or a sprinkle of cinnamon.
-
Storage: Store the cloud bread in an airtight container in the fridge for up to 3-4 days. You can also freeze it for up to 2 months. Reheat in the oven or microwave before serving.
