Ingredients
1 cup pineapple juice
6 Tbsp BBQ sauce
6 Tbsp brown sugar
1 Tbsp chili powder
1 Tbsp red pepper flakes
4 to 6 boneless skinless chicken breasts
Instructions
In a bowl, whisk together pineapple juice, brown sugar, BBQ sauce, chili powder, and red pepper flakes.
Place chicken in a gallon ziplock bag. Pour the marinade over the chicken. Seal the bag and refrigerate for 2 to 4 hours.
Remove the chicken from the marinade. Grill until fully cooked, about 12 to 15 minutes, ensuring the internal temperature reaches 165ºF.
Notes
- Marinade Management: To maximize flavor, make sure the chicken is fully submerged in the marinade and stored in the fridge during the marinating process to keep it safe and flavorful.
- Grill Mastery: If grilling, ensure your grill is properly preheated and that the chicken has room to cook evenly without overcrowding.
- Sauce Savvy: Reserve some marinade (before adding the chicken) to use as a basting sauce for extra flavor during the final minutes of cooking. Remember never to use marinade that has been in contact with raw chicken.
- Serving Suggestions: Serve this chicken with a side of grilled pineapple rings or a pineapple salsa to enhance the tropical flavor profile.
