Description

Sweet Amish Macaroni Salad is a creamy, tangy, and delightfully sweet dish that perfectly complements summer barbecues, holiday potlucks, or casual family dinners. This traditional recipe combines tender elbow macaroni with a medley of fresh vegetables, hard-boiled eggs, and a signature sweet-tangy dressing.

Ingredients

Scale

2 cups uncooked elbow macaroni
3 large eggs, hard-boiled
3 sticks celery, chopped
1 onion, chopped or diced
2 tbsp sweet pickle relish
3 tbsp yellow mustard
1 small red bell pepper, stemmed, seeded, and chopped
2 cups Miracle Whip salad dressing
¾ cup white sugar
2 ¼ tsp white vinegar
½ tsp celery seed
Salt and pepper to taste

Instructions

Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water. Set aside to cool.
Peel and chop the hard-boiled eggs and place them in a large mixing bowl.
Add the chopped celery, diced onion, sweet pickle relish, and chopped red bell pepper to the bowl.
In a separate small bowl, whisk together the yellow mustard, Miracle Whip salad dressing, white sugar, white vinegar, celery seed, salt, and pepper until well combined.
Pour the dressing mixture over the ingredients in the large mixing bowl.
Add the cooled cooked macaroni to the bowl and gently toss until all ingredients are evenly coated with the dressing.
Cover the bowl and refrigerate the macaroni salad for at least 1 hour before serving to allow the flavors to meld.
Before serving, give the salad a final stir and adjust seasoning if needed.
Serve chilled and enjoy the delicious sweetness of this Amish-inspired macaroni salad!

Notes

  • Ingredient Quality: Use fresh vegetables and high-quality elbow macaroni for the best flavor and texture.
  • Dressing Tips: Whisk the dressing until completely smooth to ensure even coating throughout the salad.
  • Refrigeration Time: Allow the salad to chill for at least an hour before serving. This step is crucial for the flavors to meld together.
  • Adjusting Sweetness: The sweetness can be customized by adjusting the amount of sugar or using natural sweeteners like honey.
  • Make-Ahead Option: You can prepare the salad a day in advance. This not only saves time but also enhances the flavor. Just give it a quick stir before serving.
  • Dietary Adjustments: For a lighter version, replace Miracle Whip with Greek yogurt or light mayonnaise. To make it gluten-free, simply substitute with gluten-free pasta.
