This hearty and comforting casserole combines the rich flavor of classic meatloaf with creamy, cheesy loaded mashed potatoes on top. It’s the perfect all-in-one dinner that’s satisfying, family-friendly, and makes great leftovers!
Ingredients
For the Meatloaf Base:
- 1 ½ lbs ground beef
- 1 egg
- ½ cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Potato Topping:
- 4 cups mashed potatoes (prepared and seasoned)
- 1 cup shredded cheddar cheese
- ½ cup cooked turkey bacon, crumbled
- ¼ cup sour cream
- 2 tablespoons chopped green onions (optional)
Instructions
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ Mix the meatloaf base: In a large bowl, combine the ground beef, egg, breadcrumbs, onion, garlic, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix until fully incorporated.
3️⃣ Form the base: Press the meat mixture evenly into a greased 9×13-inch baking dish.
4️⃣ Bake for 25–30 minutes, or until the meatloaf is fully cooked through.
5️⃣ Prepare mashed potatoes if not already made—season to taste.
6️⃣ Drain excess grease from the cooked meatloaf and remove from the oven.
7️⃣ Spread the mashed potatoes evenly over the meatloaf layer.
8️⃣ Top with shredded cheddar cheese and crumbled turkey bacon.
9️⃣ Bake again for 10–15 minutes, or until the cheese is melted and bubbly.
🔟 Garnish and serve: Let rest for 5 minutes, then add a dollop of sour cream and sprinkle with green onions (if using). Serve warm!
