1 tbsp Cajun seasoning
-
1 tsp smoked paprika
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
½ tsp salt
For the Alabama White Sauce:

1 cup mayonnaise
-
¼ cup apple cider vinegar
-
1 tbsp lemon juice
-
1 tbsp horseradish (prepared, not creamy)
-
1 tbsp Dijon mustard
-
1 tsp garlic powder
-
1 tsp black pepper
-
½ tsp salt
-
½ tsp cayenne pepper (optional, for heat)
For garnish (optional):
-
Chopped fresh parsley
-
Lemon wedges
Instructions
1️⃣ Prepare the marinade:
In a small bowl, mix together Cajun seasoning, smoked paprika, garlic powder, onion powder, black pepper, and salt.
2️⃣ Season the chicken:
Rub chicken breasts with olive oil and coat evenly with the Cajun seasoning blend. Let sit for at least 15 minutes (or refrigerate for up to 4 hours for deeper flavor).
3️⃣ Make the Alabama White Sauce:
In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, garlic powder, black pepper, salt, and cayenne pepper. Refrigerate until ready to serve.
4️⃣ Preheat the grill:
Heat your grill to medium-high (about 400°F / 200°C). Lightly oil the grates to prevent sticking.
5️⃣ Grill the chicken:
Place chicken on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes.
6️⃣ Serve:
Slice the grilled chicken and drizzle generously with Alabama White Sauce. Garnish with chopped parsley and lemon wedges if desired.
