Description

Chex Scotcheroos are a classic, no-bake treat that combines the crunch of Chex cereal with the rich flavors of chocolate and butterscotch.


Ingredients

  • 6 cups Chex cereal (rice or corn)
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups butterscotch chips

Instructions

  • Measure out the Chex cereal into a large mixing bowl and set it aside.
  • In a saucepan over medium heat, combine the light corn syrup and granulated sugar. Stir constantly until the mixture comes to a boil.
  • Remove the saucepan from heat and stir in the creamy peanut butter and vanilla extract until smooth and well combined.
  • Pour the peanut butter mixture over the Chex cereal, gently folding and stirring until the cereal is evenly coated.
  • Press the cereal mixture firmly and evenly into a greased 9×13-inch baking dish.
  • In a microwave-safe bowl, melt together the semi-sweet chocolate chips and butterscotch chips in 30-second intervals, stirring between each interval until smooth and melted.
  • Spread the melted chocolate and butterscotch mixture evenly over the pressed cereal in the baking dish.
  • Allow the Chex Scotcheroos to cool and set at room temperature for about 1-2 hours, or until the chocolate topping is firm.
  • Once set, cut the Scotcheroos into bars or squares for serving.

  • Cereal Choice: The recipe traditionally uses Rice or Corn Chex, but feel free to experiment with other varieties like Wheat Chex for a different flavor and texture. Ensure the cereal is fresh for the best crunch.
  • Peanut Butter: Creamy peanut butter works best for a smooth texture. If you’re using natural peanut butter, ensure it’s well stirred as the oil separation can affect the consistency of your Scotcheroos.
