Ingredients
For the meringue:
- 4 large egg whites
- 1 cup (200g) granulated sugar

For the filling:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries (plus extra for topping, optional)
Instructions
- Preheat your oven to 325°F (160°C). Line a 9×13-inch baking tray with parchment paper.
- In a clean, dry bowl, whisk the egg whites until soft peaks form. Gradually add the granulated sugar, one spoon at a time, beating until the meringue is thick and glossy.
- Gently fold in the vinegar (or lemon juice), cornstarch, and vanilla extract.
- Spread the meringue evenly into the prepared baking tray, smoothing the top.
- Bake for 20–25 minutes or until the top is lightly golden and crisp. Let cool in the pan for a few minutes.
- Place a clean sheet of parchment paper on a flat surface. Turn the meringue out onto it and carefully peel off the baking parchment. Let cool completely.
- In a bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Spread the whipped cream over the cooled meringue, leaving a small border around the edges. Scatter fresh raspberries over the cream.
- Using the parchment to help, carefully roll the meringue from one short end to the other into a log shape. Don’t worry if it cracks — that’s normal.
- Transfer to a serving plate and chill for at least 30 minutes before slicing. Garnish with extra raspberries if desired.
