These Crispy Parmesan Asparagus Fries turn fresh asparagus into a savory, oven-baked snack that’s crunchy on the outside and tender on the inside. Instructions
1️⃣ Preheat & prep pan:
Preheat your oven to 425 °F (220 °C). Line a baking sheet with parchment paper or a silicone mat and lightly coat with cooking spray (or brush with olive oil).
2️⃣ Trim asparagus:
Rinse and pat dry the asparagus. Snap or cut off the woody bottom ends (about 1–1½ inches) so only tender stalks remain.
3️⃣ Prepare the coating:
In a shallow bowl, whisk together eggs and milk until smooth.
In a second shallow bowl, combine panko, Parmesan, garlic powder, oregano, salt, and pepper.
4️⃣ Coat the asparagus:
Working in batches, dip each asparagus spear into the egg mixture, letting excess drip off, then press into the panko-Parmesan mixture to coat thoroughly. Place each coated spear on the prepared baking sheet in a single layer.
5️⃣ Bake to crispy perfection:
Lightly spray the tops of the asparagus fries with cooking spray (or drizzle with a bit of olive oil). Bake for 12–15 minutes, turning once halfway through, until the crust is golden and crisp and asparagus is tender.
6️⃣ (Optional) Make the dipping sauce:
While fries bake, whisk together Greek yogurt, mayonnaise, lemon juice, garlic powder, salt, and pepper in a small bowl. Adjust seasoning to taste.
7️⃣ Serve immediately:
Transfer asparagus fries to a serving platter. Serve hot alongside the creamy dip or your favorite sauce.
