Ingredients

1 ½ lbs sirloin or flank steak, cut into bite-sized pieces

1 ½ lbs baby potatoes, quartered

1 small onion, diced

1 cup shredded cheddar cheese

6 strips cooked bacon, crumbled

Instructions
1️⃣ Prep the ingredients: Place steak pieces, potatoes, and onion into the crockpot. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
2️⃣ Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender and steak is cooked through.
3️⃣ Add cheese and bacon: About 15 minutes before serving, sprinkle cheddar cheese and crumbled bacon over the top. Cover again to let the cheese melt.
4️⃣ Serve: Scoop into bowls and top with sour cream and green onions if desired.
