  • 1 ½ lbs baby potatoes, quartered

  • 1 small onion, diced

  • 1 cup shredded cheddar cheese

  • 6 strips cooked bacon, crumbled

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • ½ cup sour cream (for serving)

Instructions
