  • Author: Naomi
  • Total Time: 50 min

Description

These Turtle Bars are a layered dessert dream—starting with a buttery shortbread crust, topped with rich homemade caramel, roasted pecans, and melted chocolate. Perfect for bake sales, holidays, or when you’re craving something truly decadent and sweet.

Ingredients

Scale

For the crust:

  • 1 cup (2 sticks) unsalted butter, softened

  • 2 cups all-purpose flour

  • ½ cup brown sugar, packed

  • ¼ tsp salt

For the caramel layer:

  • 1 cup unsalted butter

  • 1 cup brown sugar, packed

  • 2 tbsp light corn syrup (optional for smoother caramel)

  • 2 tbsp heavy cream

Toppings:

  • 1 ½ cups chopped pecans

  • 1 ½ cups semi-sweet chocolate chips

Instructions

1️⃣ Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.

2️⃣ Make the crust: In a medium bowl, mix softened butter, flour, brown sugar, and salt until crumbly. Press evenly into the bottom of the pan.

3️⃣ Bake crust: Bake for 15–18 minutes until lightly golden. Remove from oven but keep oven on.

4️⃣ Make caramel: In a saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and cream. Bring to a gentle boil and cook for 3–4 minutes, stirring constantly, until thickened and smooth.

5️⃣ Assemble: Sprinkle pecans over the baked crust. Pour caramel evenly over pecans. Return to oven for 10–12 minutes.

6️⃣ Add chocolate: Remove from oven and immediately sprinkle chocolate chips on top. Let sit 2–3 minutes to melt, then spread gently into an even layer.

7️⃣ Cool and cut: Let cool completely at room temperature, or chill to speed up. Once set, cut into squares or bars.

Notes

  • Shortcut: Use store-bought caramel sauce for quicker prep—just pour over the crust and pecans before baking.

  • Storage: Store in an airtight container at room temp for 3 days or refrigerate for longer freshness.

  • Add-ins: Try a pinch of sea salt on top for salted caramel flavor!
