  • Author: Naomi
  • Total Time: 1hr

Description

This Easy Apple Cake is moist, tender, and packed with fresh apple chunks and warm cinnamon. Perfect for a quick dessert, afternoon snack, or even breakfast. It requires simple pantry ingredients and no fancy equipment!

Ingredients

Scale

For the cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • 2 medium apples, peeled and chopped

Optional Topping:

  • 1 tbsp granulated sugar
  • ½ tsp cinnamon

Instructions

1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

2️⃣ Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

3️⃣ Mix wet ingredients: In a large bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla and sour cream.

4️⃣ Combine: Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chopped apples.

5️⃣ Transfer to pan: Pour the batter into the prepared cake pan and spread it evenly.

6️⃣ Add topping (optional): Mix the topping sugar and cinnamon in a small bowl and sprinkle evenly over the cake batter.

7️⃣ Bake: Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.

8️⃣ Cool and serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Best Apples to Use: Granny Smith, Honeycrisp, or Fuji for a good balance of tart and sweet.

  • Texture Tip: Don’t overmix the batter—stir until just combined to keep the cake soft and tender.

  • Moisture Boost: Sour cream keeps the cake moist; you can substitute with Greek yogurt if needed.
