Ingredients
-
4 boneless, skinless chicken breasts (or thighs)
-
4 medium potatoes (Yukon Gold or Russet, peeled and sliced thin)
-
1 can (10.5 oz) cream of chicken soup (or any cream of soup you prefer)
-
1/2 cup sour cream
-
1 cup shredded cheddar cheese (or mozzarella)
-
1/2 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
1/2 teaspoon paprika
-
1 tablespoon olive oil
-
Salt and pepper, to taste
-
Fresh parsley or chives, chopped (optional, for garnish)
Instructions
1️⃣ Preheat the Oven:
-
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2️⃣ Prepare the Potatoes:
-
Slice the potatoes into thin rounds (about 1/8-inch thick) to ensure they cook evenly. Place them in the bottom of the prepared baking dish and season with a little salt and pepper.
3️⃣ Prepare the Chicken:
-
In a small bowl, mix the garlic powder, onion powder, paprika, salt, and pepper. Rub the chicken breasts with olive oil and sprinkle with the seasoning mixture, ensuring each piece is well coated.
4️⃣ Assemble the Casserole:
-
Place the seasoned chicken breasts on top of the sliced potatoes in the baking dish.
5️⃣ Make the Creamy Sauce:
-
In a medium bowl, combine the cream of chicken soup and sour cream. Stir well until smooth. Pour this mixture evenly over the chicken and potatoes.
6️⃣ Top with Cheese:
-
Sprinkle the shredded cheddar cheese (or mozzarella) over the top of the casserole.
7️⃣ Bake:
-
Cover the casserole with aluminum foil and bake for 35-40 minutes. After 35 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is fully cooked (internal temperature should be 165°F/74°C) and the cheese is golden and bubbly.
8️⃣ Serve and Enjoy:
-
Once done, remove the casserole from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley or chives for an added touch.
