These easy chocolate brownie cookies blend the best of both dessert worlds—rich, chewy brownies and crisp-edged cookies—all in one simple recipe. Using a box mix and pantry staples, you’ll create irresistible chocolate treats that can be customized with peanut butter, chocolate chips, nuts, and more. Whether you’re baking for a party or indulging at home, this is the go-to cookie for any chocolate lover.

Ingredients

Scale
  • 2 ½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ tsp salt
  • 3 large egg whites
  • 1 tbsp vanilla extract
  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together powdered sugar, cocoa powder, and salt.
  3. Add egg whites and vanilla extract, mixing until a thick, fudgy batter forms.
  4. Fold in chocolate chips and nuts if using.
  5. Scoop tablespoon-sized mounds of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10–12 minutes, until the tops are glossy and cracked.
  7. Let cookies cool completely on the baking sheets before removing.

Notes

  • For a true buckeye experience, don’t skip the peanut butter layer or drizzle.

  • Let cookies cool completely before removing to prevent breakage.

  • Add espresso powder to intensify the chocolate flavor.

  • Freeze dough balls for fresh cookies any time.

  • Try stuffing cookies with peanut butter cups for an ultra-rich variation.
